Ideally, all honey varieties should be stored away from the sun and heat, ideally in a dark and cool place. Despite this general guideline, it is noteworthy that all honeys endure, through time, natural changes. Honey crystallization is a natural effect that does not affect the quality of the product; to the contrary crystallization indicates the purity of the product. Depending the type of honey, crystallization occurs at different speeds and to varying extents.
